The XPS 8500 has 4 USB 2.0 ports and 4 USB 3.0 ports and a better interface for them at the front.
The XPS 8300 has 6 USB 2.0 ports and 2 optional USB 3.0 ports which use a PCie-x1 slot.

The XPS 8500 has the option to order with it Windows 7 Professional, my XPS 8300 had only the option for Home Premium or Ultimate.
The XPS also has different graphics cards, the best one at the moment seems to be the AMD Radeon HD 7770 2GB DDR5 Graphics card.
The XPS 8500 also has options to configure a SSD, you can put the part in the XPS 8300 if you manually upgrade it.
Bluetooth seems to be standard with the Dell Wireless 1703 card opposed to an optional chassis and Bluetooth 360 card on the XPS 8300.

Otherwise the XPS 8500 just seems to be a fully upgraded XPS 8300, it looks to be a good system.

The Service Manual doesn't seem to be available for it yet however.
